It’s Edible! Easy-Ass Stir-fry!

I used to make my own teriyaki sauce (I’ll post the recipe below). It was great to make a large batch of it just to have on hand in case of a sauce emergency. It was great on chicken, with rice and, of course, in stir-fry. Then, whilst strolling through Safeway one day, we came across the Kikkoman Triple Ginger sauce from their Teriyaki Takumi Collection. It tastes just as good as my homemade sauce and I don’t have to do anything but open the bottle and dump it in.

So, this has become our new go-to for stir-fry night. It tastes so good, I usually don’t leave any in the bottom of my bowl (whether there are veggies and meat left or not). So, with that in mind, this is what we put in our stir-fry:

  • 1 pound of stir-fry beef (we get ours fresh from a local butcher)
  • 1 large onion, chopped and cooked in butter
  • 1 can of cut baby corn
  • 1 can of bamboo shoots
  • Cut green beans or brocolinni
  • 1 orange pepper
  • 1 large carrot, grated
  • Baby zucchini, chopped

We start off by browning the onion in butter at a medium-high heat. This gives it a nice texture without adding any additional flavour. You can keep your onion pieces are large or as small as you like. It’s really a personal preference thing. Once the onions are done, throw the meat in and brown thoroughly in as much sauce as you see fit. We usually use a third of the bottle to start. Once the meat is brown on all sides, start adding your veggies: corn, bamboo, beans and carrot first, pepper and zucchini a little later. Once things have had a chance to cook a bit, I add more sauce, usually by sight. We end up with about 1/4-1/3 of the bottle left over. Turn the heat down and simmer everything until the flavors are mixed and the veggies have had a chance to soak up some of the sauce. Serve as is or over the rice of your choice.

This tasted so good tonight, I went back for seconds (of just the veggies!) I never do that anymore! For a bottled sauce, this is one of the best, and you should definitely give it a try. However, if you want to make your own, try the recipe below:

  • 2 tablespoons cornstarch

  • 2 tablespoons cold water

  • 1/2 cup packed brown sugar

  • 1 cup soy sauce

  • 1/2 cup cider vinegar

  • 2 clove garlic, minced

  • 1 teaspoon ground ginger

  •  ground black pepper to taste

Combine all ingredients in a sauce pan and stir together. Simmer over low heat, stirring often, until sauce starts to bubble and thicken. Enjoy!
